We had the good fortune of connecting with Bailey Erickson and we’ve shared our conversation below.

What should our readers know about your business?
Wafel-Bitte was started to teach my daughter business skills. We thought she would learn all she needed to know, leave for the U.S. Air Force and then I would close the business and retire. Fate had other things in mind. As it turned out, our product has become greatly loved due to is originality and delicious taste. We won Entrepreneur of the Year, Culinary Business of the Year and Start-Up Business of the Year.

Because our customers loved our waffles so much, they asked us to sell the mix. In 2021, we started making the mix and people love it. Other customers asked us to make a gluten-free option. We listened to our customers and now provide a gluten-free option. People cannot tell the difference between the original and gluten free and are extremely grateful to hvae a gluten-free product that tastes so special.

Let’s say your best friend was visiting the area and you wanted to show them the best time ever. Where would you take them? Give us a little itinerary – say it was a week long trip, where would you eat, drink, visit, hang out, etc.
If my best friend was visiting, I would take her on a boat ride and fishing on Lake Guntersville. We would have dinner at Top Of the River in Guntersville. On Monday night, we would attend Concerts in the Park in Big Spring Park, Huntsville. On Tuesday, we would go to the Stovehouse for dinner and listen to music. On Wednesday we would go to Lowe Mill and attend a painting class at ArtFurPaws by Stephanie Weaver. On Thursday we would go to the Camp at MidCity District, have dinner and listen to music. On Friday we would attend a concert at Burritt on the Mountain.

The Shoutout series is all about recognizing that our success and where we are in life is at least somewhat thanks to the efforts, support, mentorship, love and encouragement of others. So is there someone that you want to dedicate your shoutout to?
This Wafel-Bitte Shoutout is for Dave Junghans, retired Engineer, Madison, AL. ([email protected]) Dave met us after we started Wafel-Bitte and was a tremendous help. He was the quiet helper who did so much. He did the heavy lifting of bins, sugar, equipment, etc. when needed. He helped set up and take down tents at markets and large events and made sure we had electricity running for the waffle makers. Dave developed a spreadsheet to track costs, production, and estimated profit. He worked on flyers, packaging, websites and e-commerce sites. Let’s not forget that he also helped manufacture the mix in the commercial kitchen. Dave did not have to do any of this. He retired after having had a successful career. His help was and still is extremely appreciated and will never be forgotten. Thank you, Davey.
